Chocolate Cookies

Chocolate cookies are not a common go-to for dessert, but these are some of the MOST delicious cookies and one of my absolute favorites. Many chocolate cookie recipes do actually use too much chocolate (yes, there is such a thing as too much). These are just chocolatey enough without overdoing it. This recipe makes about 18 cookies.

CHOCOLATE COOKIES

1 1/2 cup organic sugar
1 cup butter, very soft but not melted
1/2 tsp salt
1 egg
1 tsp vanilla
2 cups spelt, einkorn, or other safe flour
1/2 cup high-quality cocoa
1/2 tsp baking powder
1/2 tsp baking soda


Preheat oven to 350˚ F (176˚ C). Cream together sugar and butter until creamy. Add salt, egg, and vanilla and blend till smooth. In a separate bowl, sift together flour, cocoa, baking powder, and baking soda then mix fully. Combine both sets of ingredients until it comes together into a dough. Line one or two cookie sheets with parchment paper. Roll balls of dough about 1 inch in diameter, and place on cookie sheet about 3 inches apart. Bake for 16-17 minutes.
