Sodium Acetate

I introduced sodium acetate to the nutritional community, and its use has rightly taken off for its effects on gut health as well as helping to improve and balance energy levels, as many people do not naturally produce enough acetic acid in the gut to support a healthy metabolic rate. It's even helpful in treating things like alcoholism and addiction.

The taste is rather off-putting, however, and I hope someone eventually makes a multi-mineral supplement of acetates which would supply minerals without favoring any single one but also provide more acetic acid than can be supplemented through things like straight up vinegar. In the meantime I have found that adding other minerals to the recipe can do this service. For instance, using potassium almost completely neutralizes the taste (and supplements potassium too). Never use only potassium, without accompanying sodium potassium can stop your heart. I've posted the alternative recipe here along with the original for sodium acetate. It's use and mechanisms of action are discussed at length in my book, Fuck Portion Control. You can also add calcium carbonate, but just as with potassium do not use in excess as calcium overdose is very uncomfortable and dangerous. 

SODIUM ACETATE
*never mix in a sealed container, reaction is
volatile and will burst container.

1 tsp baking soda
3 tablespoons vinegar (plus more if needed)

Place baking soda in an open cup or bowl, slowly adding vinegar until foaming stops. Once reaction slows add small amounts of vinegar until all sodium bicarbonate has disappeared or fizzing ceases (swirl or agitate the solution to react all bicarbonate). Dilute this remaining solution with water, orange juice, or milk, and divide into two or three doses separated by at least an hour when starting sodium acetate. Adding too much vinegar makes it taste acrid, too much bicarbonate makes it salty, balancing the two is key to a mild taste and may take practice. The benefit of this comes from repetition, and excess can be unhelpful or cause sodium overdose, so please don’t do that. It is also best used after or with a meal. Some conditions like Crohn's disease are believed to be an excess of acetate so please consult with a doctor before using sodium acetate.
